Whats Inside:
4 Chicken thigh and drumstick joints
2 dessert apples, cored, quartered
250g shallots, peeled,halved if large
625g parsnips quartered
6 bay leaves
2tbs olive oil
2tbs maple syrup
2tbs cider vinegar
Cook It:
- Slash the chicken 3-4 times
- Place in a roasting tin with the apples, shallots, parsnips and bay leaves
- Min the olive oil, maple syrup, and cider vinager and spoon over the chicken and vegetables
- Add 4tbs of water to tin
- Cook at 190 degrees oven for 45mins
- Baste the chicken and vegetables half way through
- Once cooked, serve with cococunt rice, and salad.
Note: I used 8 drumsticks, you will see, in the photo, as I could only find the drumsticks on shopping night – worked just as well!
