3/4cup, flour
1tsp, baking powder
1tbs, caster sugar
1/2cup, coconut milk
1/2cup, smooth ricotta
1, egg
2tsp, vanilla bean paste
butter for cooking
Cook It …
1, In a glass bowl, sift flour and baking powder.
2. Stir in sugar.
3. In a glass jug, whisk coconut milk, ricotta, egg, vanilla.
4. Stir in with dry ingredients.
5. Cook on medium heat, 1/4 cupfuls. 3 minutes one side, and 1 min on the other.
Do not worry, if your mixture, seems thick, this will mean nice thicker pancakes, that won’t burn.
Also, you want golden pancakes on either side, so, adjust your pan temperature, and butter amount, if they burn.
