Ingredients:
Salad:
1/3 200g bag mixed lettuce leaves
8 cherry tomatoes, halved
1/2 small lebanese cucumber, halved, and sliced
100g greek feta cheese, cubed
6 marinated kalamata olives
2 fat pieces marinated artichoke hearts, sliced into slivers
1 tsp capers
1 stalk fresh mint leaves
2 stalks fresh coriander leaves
Dressing:
1tbs whole grain mustard
2 tbs balsamic vinegar
3tbs extra virgin olive oil
splash of lemon juice (1/4 tsp)
salt and pepper to taste
Cook It!
- Add salad ingredients together in a bowl. Arrange nicely.
- Mix whole grain mustard, balsamic vinegar, lemon juice and a pinch of salt until well blended, in a small measuring cup.
- Pour in oil, little by little, and whisk until well blended.
- Add salt and pepper to taste.
- Pour over your salad just prioir to serving. Re-whisk, if dressing has separated. Do not refreigertae dressing, as it will separate, and oil will harden, Yuk! Enjoy!
